Susie Morrison, of <a href=\"http:\/\/gourmetglow.co.uk\/wp\/\" target=\"_blank\" rel=\"nofollow noopener\">Gourmet Glow<\/a>, isn\u2019t a fan of pancakes. She\u2019s a fantastic chef who can make ANYTHING (see her <a href=\"https:\/\/www.instagram.com\/gourmetglow\/\" target=\"_blank\" rel=\"nofollow noopener\">Instagram @gourmetglow<\/a> if you don\u2019t believe me) but she\u2019s much of a pancake lover. Or of dumplings. I KNOW. How can we still be friends with her? Thank goodness she\u2019s a great chef, eh?! However, she is always up for a culinary challenge so when we asked her to come up with an awesome seasonal pancake recipe just for our readers, she went above and beyond.<\/p>\n<p>Rhubarb is a fantastic ingredient too \u2013 sweet and sour, yet warming when spiced, it\u2019s also a rich source of dietary fibre and polyphenolic flavonoids like beta-carotene, lutein, and zeaxanthin (carotenoids which are beneficial for eye health). Susie uses forced rhubarb , which is grown in the \u2018rhubarb triangle\u2019 in Yorkshire. This is a 9 square mile triangle between Wakefield, Morley and Rothwell. You learn something new every day, right? It\u2019s cultivated entirely in the dark and picked by candlelight as light stops growth. All sounds rather crazy, doesn\u2019t it? But the proof lies in the taste \u2013 these are paler, sweeter and more tender than summer rhubarb and it\u2019s only grown in winter. Hurrah!<\/p>\n<h4><span style=\"color: #ff00ff;\">Vegan Cinnamon Pancakes with Spiced Roast Rhubarb Recipe<\/span><\/h4>\n<h5><strong>Ingredients<\/strong><\/h5>\n<p><strong>Pancakes<\/strong><\/p>\n<ul>\n<li>6 tbsp plain flour<\/li>\n<li>1 tbsp coconut sugar<\/li>\n<li>\u00bd tsp baking powder<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>Pinch salt<\/li>\n<li>1 brown banana<\/li>\n<li>2 tbsp dairy-free milk<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1 tbsp coconut oil<\/li>\n<\/ul>\n<p><strong>Rhubarb topping<\/strong><\/p>\n<ul>\n<li>150g rhubarb (cut into 3cm sticks)<\/li>\n<li>1 tbsp coconut sugar<\/li>\n<li>2 star anise<\/li>\n<li>2 tbsp orange juice<\/li>\n<li>1 strip of unwaxed orange zest<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 180\u2019C<\/li>\n<li>Place the rhubarb in an oven dish.<\/li>\n<li>Add in the remaining ingredients and stir together evenly.<\/li>\n<li>Roast for 15 &#8211; 20 minutes until the rhubarb is tender but not falling apart.<\/li>\n<li>Remove the orange zest strip, separate the rhubarb into two and blend one half into a puree.<\/li>\n<li>Leave this in the cooling oven to keep it warm.<\/li>\n<li>In the meantime, mix the flour, sugar, baking powder and cinnamon together with salt.<\/li>\n<li>Puree the banana with the milk and vanilla and stir into the flour mix.<\/li>\n<li>Heat 1 tbsp coconut oil in a frying pan.<\/li>\n<li>Over a medium heat, roughly divide the batter into four batches and spoon into the frying pan. Cook until golden and puffed for between a minute to a minute and a half.<\/li>\n<li>Top each pancake generously with the pureed and sticks of rhubarb.<\/li>\n<\/ol>\n<p>PS.
