As a massive foodie, Susie thinks about creating new recipes and new ways to cook all the time. And when we say all the time, we mean ALL THE TIME.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7123\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2018\/01\/SweetcornSoup.jpg\" alt=\"Thai Green Sweetcorn Soup\" width=\"1000\" height=\"750\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2018\/01\/SweetcornSoup.jpg 1000w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2018\/01\/SweetcornSoup-300x225.jpg 300w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2018\/01\/SweetcornSoup-768x576.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Whilst not incorporating all the usual suspects you&#8217;d find in a Thai Green curry, the lime leaves (you can use lime zest if you can&#8217;t get the leaves), lemongrass and coriander really bring an Asian feel to your tastebuds. Susie has also deliberately left it fairly chunky to add texture and bite. A quick and easy dish, you can also keep this in the fridge in a sealed container for up to 3 days or keep it frozen for a month. It&#8217;s especially delicious served with a hunk of warm bread but is equally as filling served on its own.<\/p>\n<p>&nbsp;<\/p>\n<h4><span style=\"color: #ff00ff;\">Thai Green Sweetcorn Recipe<\/span><\/h4>\n<h4>Ingredients<\/h4>\n<ul>\n<li>1 onion<\/li>\n<li>1 stick of celery<\/li>\n<li>Coconut oil<\/li>\n<li>Salt<\/li>\n<li>2 lemongrass stalks<\/li>\n<li>6 kaffir lime leaves<\/li>\n<li>3 garlic cloves<\/li>\n<li>4cm ginger<\/li>\n<li>1 tsp turmeric powder or 2 cm fresh turmeric root<\/li>\n<li>1 tsp coriander seeds<\/li>\n<li>5 black peppercorns<\/li>\n<li>1 green chilli<\/li>\n<li>1 pack of fresh coriander<\/li>\n<li>1 bag frozen sweetcorn<\/li>\n<li>2 400ml cans of coconut milk<\/li>\n<li>Water<\/li>\n<li>Half Lime<\/li>\n<\/ul>\n<h4><span style=\"color: #000000;\">Method<\/span><\/h4>\n<ol>\n<li>Finely chop the onion and celery and sweat them in a\u00a0 pan with a teaspoon of coconut oil and a pinch of salt until translucent.<\/li>\n<li>Set these aside and blitz in a food processor, the lemongrass, lime leaves, garlic, ginger, turmeric, coriander, peppercorns, chilli, coriander (stalks only) and 1 tbsp coconut oil, with a pinch of salt, to make a paste.<\/li>\n<li>Add this paste to the onions and celery and stir together for 5 minutes to warm to spices.<\/li>\n<li>Add in half the bag of frozen sweetborn and 2 cans of coconut milk with a little water and simmer for 5 minutes.<\/li>\n<li>Blend it all together until really smooth then add in the remaining sweetcorn and coriander and blend until chunky.<\/li>\n<li>To finish, season with a squeeze of lime juice and add more salt to taste.<\/li>\n<li>Serve immediately.<\/li>\n<\/ol>\n<h5><em>Let us know what you think!
