Peppers are packed with healthy nutrients; they have twice as much vitamin C than oranges and they contain vitamin E, B1, B2 and fibre! So, we asked It&#8217;s Pepper Time and The Grain Store for a healthy recipe that is easy to make at home and they have generously agreed to share one of their recipes with Healthy Living London\u2019s readers.<\/p>\n<p>If you&#8217;re a veggie like me, peppers as the &#8216;bun&#8217; on a quinoa, sweet potato and bean burger, is simply delicious! But the recipe below is for the carnivores&#8230;my boyfriend loved it.<\/p>\n<h4><span style=\"color: #000000;\"><strong>Pepper Burgers with Beetroot and Goats\u2019 Cheese<\/strong><\/span><\/h4>\n<div id=\"attachment_5695\" style=\"width: 510px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5695\" class=\"wp-image-5695\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2017\/04\/Peppers-Purgers_06019-300x225.jpg\" alt=\"\" width=\"500\" height=\"375\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2017\/04\/Peppers-Purgers_06019-300x225.jpg 300w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2017\/04\/Peppers-Purgers_06019-768x576.jpg 768w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2017\/04\/Peppers-Purgers_06019-1024x767.jpg 1024w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><p id=\"caption-attachment-5695\" class=\"wp-caption-text\">Pepper Burgers with Beetroot and Goats\u2019 Cheese<\/p><\/div>\n<h5><strong>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 <span style=\"color: #000000;\">\u00a0 \u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Serves 4 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Takes 20 Minutes<\/span><\/strong><\/h5>\n<h5><span style=\"color: #000000;\"><strong>Ingredients<\/strong><\/span><\/h5>\n<p>4 orange peppers<br \/>\nSmall glug of olive oil<br \/>\nSalt and pepper, to season<br \/>\n400g minced beef<br \/>\n2 tsp mustard powder<br \/>\n1 large clove of garlic, minced<br \/>\n100g (1 medium) beetroot, grated<br \/>\n2 tbsp porridge oats<br \/>\n2 tbsp breadcrumbs<br \/>\n70g goats\u2019 cheese, sliced<br \/>\n2 avocados<br \/>\n1 small punnet of watercress, snipped<br \/>\n8 crinkle-cut slices of gherkin<br \/>\n8 sundried tomatoes<\/p>\n<h5><span style=\"color: #000000;\"><strong>Method<\/strong><\/span><\/h5>\n<ol>\n<li>Preheat oven to 200\u00b0C and cut the peppers in half length-ways, removing any white seeds. Rub the peppers inside and out with olive oil then season with salt and pepper.<\/li>\n<li>Place the peppers in the oven for 15\u201320 minutes, or until softened slightly but not collapsing. The peppers should be tinged and golden brown around the edges.<\/li>\n<li>Place the minced beef, mustard powder, minced garlic, grated beetroot, oats and breadcrumbs in a mixing bowl, season with salt and pepper, then use your hands to combine.<\/li>\n<li>Mould the mixture into four burger patties. Once formed, lightly oil the surface of the burgers on either side and cook for 3\u20134 minutes on each side in a large, non-stick frying pan over a medium\u2013high heat.<\/li>\n<li>Peel and slice the avocados, then top four pepper halves with the avocado slices and snipped watercress. Place a burger patty on top of each pepper \u2018burger bun\u2019. On top of this add the sliced goats\u2019 cheese, gherkins and sundried tomatoes. Finish each burger with the remaining pepper halves and serve.<\/li>\n<li>Enjoy!<\/li>\n<\/ol>\n<p>Peppers are so versatile and can be used in so many different ways when cooking, such as for soups, salads, dips, or just grilled on the barbecue, simple. What makes them even more preferable, is that they are child friendly!
