Available until the 12th February, this toast bar is the perfect pick-me-up for anyone needing an energy boost. Sourdough or rye is topped with either peanut butter or almond butter, plus a topping. With a variety of toast toppers to choose from, such as grated apple and maple syrup or lime and coriander, it is hard to pick just one! I chose two slices and picked the delicious marinated strawberries and almond butter and the avocado and spiced seeds on sourdough. The sweet and savoury option&#8230; yummy. Pippa shares these recipes in her cookbook, <a href=\"https:\/\/www.amazon.co.uk\/Pip-Nut-Butter-Cookbook\/dp\/1849499853\" target=\"_blank\">The Nut Butter Cookbook<\/a>. She even shares the recipe for her famous Pip &amp; Nut Peanut Butter and her Almond Butter, should you wish to make the butters yourself! Plus saying that you marinated your strawberries makes it sound rather fancy, so you&#8217;ll get lots of praise from friends if you&#8217;re generous enough to make it for them. It&#8217;s a win-win situation.<\/p>\n<p><strong><span style=\"color: #ff00ff;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; &nbsp; &nbsp; &nbsp; &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Makes 2 Slices&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Takes 10 Minutes<\/span><\/strong><\/p>\n<p><strong><span style=\"color: #ff00ff;\">Ingredients<\/span><\/strong><\/p>\n<ul>\n<li>Juice of 1 lemon<\/li>\n<li>1\/2 vanilla bean pod, split in half lengthways and seeds scraped<\/li>\n<li>About 1 Tbsp honey<\/li>\n<li>250\/9oz strawberries, hulled<\/li>\n<li>2 large slices of sourdough bread, halved, or 4 regular slices (thickly sliced)<\/li>\n<li>8 Tbsp almond butter<\/li>\n<li>2 tsp pumpkin seeds (optional)<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff00ff;\">Instructions<\/span><\/strong><\/p>\n<p>Put the lemon juice, vanilla seeds and honey in a bowl and mix well with a fork to combine. Taste and add more honey if it seems too tart.<\/p>\n<p>Slice the strawberries lengthways into heart-shaped slices and add to the syrup mixture. Mix well until all the strawberries have a good coating.<\/p>\n<p>Toast the sourdough slices until golden, then immediately spread each slice generously with almond butter.
