Not the small furry animal, not the geeky cartoon character in\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Danger_Mouse_(1981_TV_series)#Main_characters\" target=\"_blank\" rel=\"nofollow noopener\">Danger\u00a0Mouse<\/a>, but the delicious Mexican sauce which rhymes with &#8216;ol\u00e9&#8217; and which is said to originate from\u00a0<a title=\"Puebla\" href=\"https:\/\/en.wikipedia.org\/wiki\/Puebla\">Puebla<\/a>, <a title=\"Oaxaca\" href=\"https:\/\/en.wikipedia.org\/wiki\/Oaxaca\">Oaxaca<\/a>, and <a title=\"Tlaxcala\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tlaxcala\">Tlaxcala<\/a>\u00a0(there doesn&#8217;t seem to be an agreement on this). Except this vegan miso mole is a modern twist on the traditional recipe.\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4282\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2016\/05\/MisoMole_sm.jpg\" alt=\"Vegan Miso Mole\" width=\"750\" height=\"570\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2016\/05\/MisoMole_sm.jpg 750w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2016\/05\/MisoMole_sm-300x228.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/h4>\n<p class=\"Body\">No one story as to how this was first invented has been settled on but legend has it, it was prepared in a rush by panicked nuns when an archbishop came to visit. Being poor, they added what they had to a pot, including chilli peppers, spices, old bread, nuts, chocolate and a hastily killed turkey. When the archbishop asked what it was, the nun replied that is was a &#8216;mole&#8217;, which meant a &#8216;mix&#8217;.<\/p>\n<p class=\"Body\">This is my modern take on the traditional mole, using miso for the all important\u00a0umami. Whilst mole is often served over meats, this is great on it&#8217;s own, served over grains. It&#8217;s rich and I&#8217;d advise to use organic, high quality ingredients where you can; the Artisan du Chocolat I&#8217;ve mentioned really does make all the difference so don&#8217;t skimp!<\/p>\n<p class=\"Body\"><b>Ingredients (all organic where possible)<\/b><\/p>\n<ul>\n<li class=\"Body\">8 plum tomatoes, chopped<\/li>\n<li class=\"Body\">2 carrots, finely sliced<\/li>\n<li class=\"Body\">1 bulb fennel, finely sliced<\/li>\n<li class=\"Body\">1 red onion, finely sliced<\/li>\n<li class=\"Body\">3 cloves garlic, crushed<\/li>\n<li class=\"Body\">1\/2 bag spinach<\/li>\n<li class=\"Body\">2tbsp grated ginger<\/li>\n<li class=\"Body\">I head broccoli, grated<\/li>\n<li class=\"Body\">1 can chopped tomatoes<\/li>\n<li class=\"Body\">1tbsp oregano leaves<\/li>\n<li class=\"Body\">1tsp thyme leaves<\/li>\n<li class=\"Body\">1tsp cayenne<\/li>\n<li class=\"Body\">1tsp cumin<\/li>\n<li class=\"Body\">1 bay leaf<\/li>\n<li class=\"Body\">1tbsp coconut palm sugar<\/li>\n<li class=\"Body\">1 lime (juiced)<\/li>\n<li class=\"Body\">1tbsp chopped parsley<\/li>\n<li class=\"Body\">3tbsp rapeseed\/hemp oil<\/li>\n<li class=\"Body\">1tbsp Artisan du Chocolat cacao stick grated<\/li>\n<li class=\"Body\">100g Miso Tasty raw unpasteurised red miso<\/li>\n<li class=\"Body\">Himalayan salt &amp; black pepper to taste<\/li>\n<\/ul>\n<h4 class=\"Body\">Method<\/h4>\n<ol>\n<li class=\"Body\">Preheat oven to 200C.<\/li>\n<li class=\"Body\">Put the plum tomatoes, salt, black pepper &amp; 1tbsp oil in a roasting tin and roast 15 minutes until soft and juicy.<\/li>\n<li class=\"Body\">Heat remaining oil in a pan and sweat onions until soft. Add garlic, cook for 1 minute, then add carrots, fennel, broccoli, ginger and herbs (retaining the parsley) with the spices.<\/li>\n<li class=\"Body\">Cook until slightly softened, add the roasted tomatoes with their juices ,chopped tomatoes and spinach.<\/li>\n<li class=\"Body\">Simmer until reduced by 1\/4 and add miso and cacao.<\/li>\n<li class=\"Body\">Taste and adjust with lime, sugar, salt &amp; pepper.<\/li>\n<li class=\"Body\">Cook for a further 5 minutes to infuse flavours.<\/li>\n<li class=\"Body\">Serve with ancient grains or rice.<\/li>\n<\/ol>\n<p><strong>Let us know what you think!
