Or maybe something with goats cheese. Or maybe, a smoothie. But a brownie?!\u00a0<\/strong><\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-3917 size-full\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2016\/04\/BEETROOTBROWNIES.jpg\" alt=\"healthy beetroot brownies\" width=\"750\" height=\"570\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2016\/04\/BEETROOTBROWNIES.jpg 750w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2016\/04\/BEETROOTBROWNIES-300x228.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/p>\n<p class=\"p1\">Surprisingly, beetroot is a great addition to sweet treats, such as brownies. For a start, it adds to the sweetness and best of all, it gives brownies a moist, fudge-like texture. And it doesn&#8217;t matter if you don&#8217;t like the taste of beetroot because&#8230; you can&#8217;t even taste it! Now that&#8217;s one way to get extra veg into your food!<\/p>\n<p class=\"p1\">For this recipe, the main piece of equipment you&#8217;ll need are a blender and a\u00a020&#215;20 springform tin.<\/p>\n<p>Vary the taste by adding in different nuts. We&#8217;ve used hazelnuts here but walnuts and pecans also work well. Keep in an air-tight container for up to 5 days in the fridge and don&#8217;t forget to share with friends!<\/p>\n<h4>Ingredients<\/h4>\n<ul>\n<li>100g gluten free flour<\/li>\n<li>75g raw cacao<\/li>\n<li>170g honey<\/li>\n<li>75ml rapeseed or flavourless oil<\/li>\n<li>3 free range eggs<\/li>\n<li>150g cooked beetroot<\/li>\n<li>75g raisins soaked in boiling water<\/li>\n<li>1tsp baking powder<\/li>\n<li>1\/2 tsp Himalayan salt<\/li>\n<li>75g hazelnuts (or nuts of your choice)<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<ol>\n<li>Preheat oven to 180C<\/li>\n<li>Liberally grease baking tin<\/li>\n<li>Put the nuts on a baking sheet and toast for 7 mins. Remove skins if not already blanched and whizz in a blender until slightly chunky.<\/li>\n<li>Blend the cooked beetroot with the raisins to form a smooth puree.<\/li>\n<li>Sift the cacao, salt and baking powder into a bowl.<\/li>\n<li>Mix the honey with the eggs and beat until smooth.<\/li>\n<li>Beat the oil into the egg mix and fold into the dry ingredients with the puree mix until homogeneous. Fold in the blitzed nuts<\/li>\n<li>Pour into the prepared tin and tap to level<\/li>\n<li>Bake for 25 mins. The brownies should be set but fudgy in the centre.<\/li>\n<li>Leave in the tin to cool and pull away from sides. Turn onto a wire rack and slice into squares 6.5&#215;6.5cm when cold.<\/li>\n<li>Enjoy with a warm mug of nut milk!
