Ideal for busy households and parents. <\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"558\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/11\/rsz_mashdirectrootvegsoup.jpg\" alt=\"Root veg soup\" class=\"wp-image-13232\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/11\/rsz_mashdirectrootvegsoup.jpg 800w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/11\/rsz_mashdirectrootvegsoup-300x209.jpg 300w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/11\/rsz_mashdirectrootvegsoup-768x536.jpg 768w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><figcaption>Root veg soup<\/figcaption><\/figure><\/div>\n\n\n<p>Serves 6 | Cooking time: 45 mins<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 pack of\u00a0<a href=\"https:\/\/www.mashdirect.com\/range\/carrot-parsnip\/\" target=\"_blank\" rel=\"noreferrer noopener\"><em>Mash Direct<\/em>\u00a0<em>Carrot &amp; Parsnip Mash<\/em><\/a><\/li><li>1 medium onion (diced)<\/li><li>2 sticks of celery (chopped)<\/li><li>2 tsp fresh ginger (finely chopped)<\/li><li>3 cloves garlic (minced)<\/li><li>2 cans vegetable or chicken broth<\/li><li>1 pumpkin (peeled, deseeded, diced)<\/li><li>1 cup of water (more if needed)<\/li><li>1\/4 tsp dried thyme<\/li><li>1\/4 tsp ground cumin<\/li><li>Salt &amp; pepper to taste<\/li><li>Heavy\/whipping cream or fat free sour cream<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Saut\u00e9 the onion and celery in a large pot on a medium heat for five-seven minutes.<\/li><\/ol>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\" start=\"2\"><li>Add the ginger and garlic to the pot, stir, and cook for two minutes until fragrant. Add the&nbsp;<em>Mash Direct Carrot &amp; Parsnip Mash<\/em>, vegetable broth, pumpkin, water, dried thyme, cumin, and salt &amp; pepper to taste.<\/li><\/ol>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\" start=\"3\"><li>With the lid slightly ajar, simmer the soup on medium-low heat for about 30 minutes or until the vegetables have softened.<\/li><\/ol>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\" start=\"4\"><li>Let the soup cool slightly, then pur\u00e9e in batches using a blender. If the soup is too thick, add water to thin it out a bit.<\/li><\/ol>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\" start=\"5\"><li>Serve with a swirl of fat free sour cream if desired.
