{"id":13225,"date":"2022-10-26T21:58:51","date_gmt":"2022-10-26T20:58:51","guid":{"rendered":"https:\/\/healthylivinglondon.com\/?p=13225"},"modified":"2022-10-26T21:58:53","modified_gmt":"2022-10-26T20:58:53","slug":"carrot-and-coriander-soup","status":"publish","type":"post","link":"https:\/\/healthylivinglondon.com\/nutrition-and-food-for-healthy-living-in-london\/carrot-and-coriander-soup\/","title":{"rendered":"Carrot and Coriander Soup"},"content":{"rendered":"\n<p>60 mins | Serves 4 | Vegetarian<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"450\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/10\/CarrotCorianderSoup.jpg\" alt=\"\" class=\"wp-image-13226\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/10\/CarrotCorianderSoup.jpg 800w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/10\/CarrotCorianderSoup-300x169.jpg 300w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2022\/10\/CarrotCorianderSoup-768x432.jpg 768w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><figcaption>Carrot and coriander soup<\/figcaption><\/figure><\/div>\n\n\n<p>The sweetness of the carrots are perfectly balanced by the coriander in this flavoursome autumn carrot and coriander soup. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Knob of <a href=\"https:\/\/www.yeovalley.co.uk\/things-we-make\/butter\/unsalted-butter\/\" target=\"_blank\" rel=\"noreferrer noopener\">Yeo Valley unsalted butter<\/a><\/li><li>1 onion, finely chopped<\/li><li>650g carrots, peeled and roughly chopped<\/li><li>1 potato, peeled and chopped<\/li><li>1 tsp ground coriander<\/li><li>1 vegetable stockpot, diluted in a litre of hot water<\/li><li>30g fresh coriander<\/li><li>4 tbsp <a href=\"https:\/\/www.yeovalley.co.uk\/things-we-make\/cream\/single-cream\/\" target=\"_blank\" rel=\"noreferrer noopener\">Yeo Valley single cream<\/a><\/li><li>Sprinkle of nigella seeds &amp; paprika<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Melt the butter in a saucepan over a medium heat. Add the onion and cook until soft, stirring occasionally for about 5 mins. Then add the carrots, potato, and ground coriander into the pan with some salt and pepper to taste.<\/li><li>Pour the stock over the vegetables and stir. Cover then bring up to boil. Once bubbling, reduce the heat to low and simmer for 30-35 mins until the vegetables are soft.<\/li><li>Add 20g of the fresh coriander to the soup (leaves and stalks!), then blend until smooth.<\/li><li>Pour the soup into 4 bowls and pour over a swirl of the silky single cream from the bottle.Sprinkle over some paprika, nigella seeds and remaining fresh coriander, then serve with some crusty butter bread.<\/li><\/ol>\n\n\n\n<p>If you find yourself with leftover single cream, put it to good use; mix it into your weekend scrambled eggs, or add a splash to your coffee.
