I know&#8230;sounds gross right?  But, I have to tell you I was absolutely astonished how well these turned out.  I&#8217;ve recently jumped on the plant over processed bandwagon.  Whilst I am not ready to commit to a fully vegan lifestyle, I recognise how much better I feel when I stick to more plant based foods in my diet, and cut the CRAP &#8211; acronym for Carbonated (drinks), Refined sugar, Alcohol, Processed (foods).  So in an effort to really get my zing back I have been testing out some recipes and making them my own!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.04.57-786x1024.png\" alt=\"\" class=\"wp-image-12161\" width=\"590\" height=\"768\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.04.57-786x1024.png 786w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.04.57-230x300.png 230w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.04.57-768x1000.png 768w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.04.57.png 1098w\" sizes=\"(max-width: 590px) 100vw, 590px\" \/><\/figure>\n\n\n\n<p>This is my take on a recipe I found in my most recent cookbook, <a href=\"https:\/\/www.earthyandy.com\/plantoverprocessedbook\">Plant over Processed<\/a> by Andrea Hannemann, who has a huge following on her Instagram account: @earthyandy.  Flicking through her book, looking for inspiration and a not-so-naughty sweet fix, I fell across her Magic Cookies recipe, and adapted it below, mainly because I didn&#8217;t have all the ingredients on her recipe list, but I certainly don&#8217;t want to take all the credit from this amazing, healthy lady, who created the key ingredients and quantities for this recipe.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients <\/h4>\n\n\n\n<p>+I can of chickpeas (drained)<\/p>\n\n\n\n<p>+1\/2 cup natural peanut butter<\/p>\n\n\n\n<p>+1\/2 cup honey (maple syrup is a great option too)<\/p>\n\n\n\n<p>+2 tsp vanilla extract<\/p>\n\n\n\n<p>+1 tsp cinammon<\/p>\n\n\n\n<p>+1\/2 tsp baking powder<\/p>\n\n\n\n<p>+1\/2 cup of raisins<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Method<\/h4>\n\n\n\n<div class=\"schema-how-to wp-block-yoast-how-to-block\"><p class=\"schema-how-to-total-time\"><span class=\"schema-how-to-duration-time-text\">Time needed:&nbsp;<\/span>30 minutes<\/p><p class=\"schema-how-to-description\"><\/p> <ol class=\"schema-how-to-steps\"><li class=\"schema-how-to-step\" id=\"how-to-step-1618220980207\"><strong class=\"schema-how-to-step-name\"><\/strong> <p class=\"schema-how-to-step-text\">Pre-heat the oven to 180\u00b0 and line a baking sheet with parchment paper<\/p> <\/li><li class=\"schema-how-to-step\" id=\"how-to-step-1618221047325\"><strong class=\"schema-how-to-step-name\"><\/strong> <p class=\"schema-how-to-step-text\">In a blender, mix a can of chickpeas (drained), peanut butter, honey, vanilla extract, baking soda, cinnamon and blend together until smooth<br\/><\/p> <\/li><li class=\"schema-how-to-step\" id=\"how-to-step-1618221114008\"><strong class=\"schema-how-to-step-name\"><\/strong> <p class=\"schema-how-to-step-text\">Fold in the raisins with a wooden spoon or spatula<\/p> <\/li><li class=\"schema-how-to-step\" id=\"how-to-step-1618221196108\"><strong class=\"schema-how-to-step-name\"><\/strong> <p class=\"schema-how-to-step-text\">Scoop out the dough and roll into equal sized balls, and press down to make a cookie shape and spread them out across the parchment paper<\/p> <\/li><li class=\"schema-how-to-step\" id=\"how-to-step-1618221240101\"><strong class=\"schema-how-to-step-name\"><\/strong> <p class=\"schema-how-to-step-text\">Bake for 20 minutes, let cool and enjoy!<\/p> <\/li><\/ol><\/div>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.15.20-946x1024.png\" alt=\"\" class=\"wp-image-12167\" width=\"710\" height=\"768\" srcset=\"https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.15.20-946x1024.png 946w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.15.20-277x300.png 277w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.15.20-768x832.png 768w, https:\/\/healthylivinglondon.com\/wp-content\/uploads\/2021\/04\/Screenshot-2021-04-12-at-11.15.20.png 1110w\" sizes=\"(max-width: 710px) 100vw, 710px\" \/><\/figure>\n\n\n\n<p>I couldn&#8217;t believe how good these taste! They are Gluten Free, Dairy Free and sweet enough, satisfying and have the right texture that a soft comforting cookie calls for!  One thing I should mention, is that they do get softer, so these are a sweet treat to enjoy fast! Perfect for a family, or hungry husband and are packed full of protein for a great post-workout snack, but if you don&#8217;t want to eat the entire batch in one go, I always find freezing portions of goodies is a great solution.
