Plus, they&#8217;re fun to eat and the action of making them helps you slow down your eating so you\u2019ve got more time to feel fuller. And yes, these will fill you up!<\/p>\n<h5>Ingredients<\/h5>\n<ul>\n<li>1 Cos Lettuce<\/li>\n<li>500g minced meat (we used pork but turkey is really good too)<\/li>\n<li>1 white onion, finely chopped<\/li>\n<li>\u00bd red pepper, roughly chopped<\/li>\n<li>1 tbs turmeric<\/li>\n<li>3 handfuls of baby spinach, washed<\/li>\n<li>6 ripe tomatoes, roughly chopped<\/li>\n<li>1 tsp lemongrass stalks, finely chopped<\/li>\n<li>\u00bd red deseeded chilli, finely chopped<\/li>\n<li>\u00bd vegetable stock cube<\/li>\n<li>2 tbs tomato puree<\/li>\n<\/ul>\n<h5>\u00a0Method<\/h5>\n<ol>\n<li>Chop the base off the cos lettuce, separate the leaves and wash well. Lay 2 each out on plates.<\/li>\n<li>Fry the onion and the mince until browned.<\/li>\n<li>Add the turmeric, chilli and lemongrass stalks and stir until well mixed.<\/li>\n<li>Add the vegetable stock cube and stir for a couple of minutes until dissolved.<\/li>\n<li>Add in the tomatoes, puree and pepper and cook for 10 minutes, stirring occasionally.
